A category is a page that has a list of links to all of the articles in that category. You can put pages into a category by putting something like this at the bottom of the page:

[[Category:Swimming]]

That would appear as a box at the bottom of the page that you want to put in the swimming category. The box would have a link in it to the category page. You can see and example of this at the bottom of the Campcraft page. Categories are useful as indexes of things where the commonality between then does not merit its own page. For example, Category:Activities exists as a index of all activities at Birch Rock. One could have made a page called Activities that has a list of activities but the reason that was not done is there would be no interesting content on that page besides the list. Conversely, pages like Duck and Loon were not put into a category like "long distance swims" because" but instead listed on a normal page long distance swim because there are things to say about long distance swims besides just listing them.
